herb roasted salmon and tomatoes

Found this great recipe while waiting in the doctor's office and it is just what he ordered. Healthy, easy to prepare and tasty.

Ingredients

  • 1 pint grape tomatoes, cut in half
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 sprigs green onions, chopped
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 1 tablespoon capers, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pound salmon filet

How To Make herb roasted salmon and tomatoes

  • Step 1
    Heat oven to 400 degrees.On large, rimmed baking sheet, toss tomatoes with 1 tbsp of oil and 1/4 tsp of salt and pepeer.
  • Step 2
    In a small bowl, combine the onions,parsley, dill, lemon zest and the remaining tbsp of oil.
  • Step 3
    Place the salmon, skin down, in the center of the pan, pushing the tomatoes to the sides. Season the salmon with 1/4 tsp of pepper and drizzle with the lemon juice. Top with the herb mixture and roast until the salmon is opaque throughout, about 20 min.
