herb roasted salmon and tomatoes
Found this great recipe while waiting in the doctor's office and it is just what he ordered. Healthy, easy to prepare and tasty.

Ingredients
- 1 pint grape tomatoes, cut in half
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 2 sprigs green onions, chopped
- 1 tablespoon dried parsley
- 1 teaspoon dried dill
- 1 tablespoon capers, chopped
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 pound salmon filet
How To Make herb roasted salmon and tomatoes

Step 1Heat oven to 400 degrees.On large, rimmed baking sheet, toss tomatoes with 1 tbsp of oil and 1/4 tsp of salt and pepeer.

Step 2In a small bowl, combine the onions,parsley, dill, lemon zest and the remaining tbsp of oil.

Step 3Place the salmon, skin down, in the center of the pan, pushing the tomatoes to the sides. Season the salmon with 1/4 tsp of pepper and drizzle with the lemon juice. Top with the herb mixture and roast until the salmon is opaque throughout, about 20 min.
