Ingredients
- 1 pound lump crab meat
- 1 - egg
- 1/2 cup mayonnaise
- 1/2 cup bread crumbs
- 1/4 cup onion, finely chopped
- 1/4 cup chopped red and green bell peppers (optional)
- 1 teaspoon worcestershire sauce
- 1/8 cup chopped cilantro (optional)
- 1/2 teaspoon tabasco sauce
- 1 tablespoon oilve oil
- 1 tablespoon butter
- - salt & pepper to taste

Step 1Carefully pick through the crab meat and remove any shells or cartilage In a mixing bowl, break up crab meat gently with a fork (do not overdo or cakes will be "mushy"

Step 2Place all other ingredients in with the crab meat and blend with a fork until well mixed. Again, take care not to overmix the crab meat

Step 3Heat butter and olive oil in a heavy skillet over medium heat Form crab cake mixture into 2" patties and place in heated oil Brown one side, then place under broiler with unbrowned side toward the broiler for 2 minutes Any extra cakes can be frozen for later use
