Ingredients
- 1 - loin of mahi mahi
- 8 - big limes
- 3/4 cup brown sugar (more if you like sweeter)
- 1 - onion (vidalia is great for this )
- 1/2 tablespoon ginger
- 3-5 cloves minced garlic
- 1 teaspoon red pepper flakes
How To Make grilled lime mahi mahi

Step 1juice limes and add sugar onion ginger garlic and red peppers

Step 2cut fish into serving size pieces and place fish in mix and soak at least 3 hours overnight even better

Step 3place soaked fish on hot grill skin side down first ( if grill is clean and you brush with oil right before putting fish on it will reduce sticking) slide the fish up and down the grill grate for first 10 seconds or so to sear and reduce sticking cook for 5 minutes and flip cook additional 5 minutes or until done. baste with juice a few times during grilling
