Ingredients
- 4 - (5- to 6-oz.) boneless skinless fish fillets, such as tilapia
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 - (4x1/2-inch) strips orange peel, cut into thin slivers
- 1 tablespoon slivered fresh basil
- 3 - plum tomatoes, chopped (about 1 1/2 cups)
- 1/4 cup finely chopped red onion
- 1 tablespoon orange juice
- 1 tablespoon olive oil
How To Make grilled fish in foil packets

Step 1Heat grill. Cut 4 pieces of heavy-duty foil into 14-inch squares. Place 1 fish fillet in center of each square. Sprinkle with salt and pepper; top with orange peel and basil.

Step 2Combine all remaining ingredients in small bowl; spoon over fish.

Step 3Fold foil over fish, making a tight double fold in center and on each end to close securely. Grill, covered, over medium heat or coals 8 to 12 minutes or until fish just begins to flake. Let stand 5 minutes. 4 points per serving
