This is very simple to prepare, yet so tasty and healthy (especially using whole wheat pasta).

Ingredients

  • 4 ounces rotini
  • 2 tablespoons butter
  • 2 cloves garlic, chopped
  • 1 clove shalotte, chopped
  • 1/2 pound medium shrimp, deveined, peeled
  • - kosher salt
  • - black pepper
  • 1 tablespoon olive oil
  • - parlsley, to garnish
  • 1 tablespoon grated parmesan cheese

How To Make garlicky butter shrimp on rotini

  • Step 1
    Cook pasta according to directions, drain.
  • Step 2
    In large skillet, melt butter over mediium heat. Add garlic and shallot and simmer for 2-3 minutes.
  • Step 3
    Add shrimp and season with salt and pepper. Add 1 tbsp of olive oil and cook for about 3 minutes, until shrimp turns pink. Toss occasionally.
  • Step 4
    Add drained rotini to pan and toss well so that all flavors are absorbed. Divide onto two plates, garnish with parsley and sprinkle with parmesan cheese.
