This fish dish is buttery, nutty, garlicy, sweet, fruity, spicy, earthy and just darn right delicious. The Mexican twist takes this recipe to the next level. Cooking with Love & Passion. sw :)

Ingredients

  • SALSA
  • 1/2 pint strawberries, chopped
  • 1 small red onion, chopped
  • 1/4 cup uncle gary's gourmet peppers chopped plus 1 tbsp juice-or favorite sweet peppers rings
  • 1 small jalapeno pepper, chopped *optional*
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • 2 teaspoons extra virgin olive oil
  • 2 pinches smoked sea salt
  • FISH
  • 1 1/4 pounds cod fillet, cut into 4 pieces
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons mexican blend spice
  • - zest of 1 lime
  • 1/2 stick unsalted butter
  • 4 - garlic cloves, thinly sliced

How To Make garlic brown butter cod & strawberry salsa

  • Step 1
    Combine salsa ingredients in a mixing bowl. Mix well and chill until ready to serve.
  • Step 2
    Season cod pieces evenly with olive oil, spice blend and zest, then set aside. Heat a large thick-bottomed skillet on medium heat. Add butter pieces. When butter turns light brown, add the garlic slices. Fry garlic until golden brown, then remove from skillet. Do not overcook. Add cod to skillet. Fry 2-4 minutes, then carefully flip and continue to fry for 2-4 minutes until cod is cooked through. Baste fish with butter during cooking. Transfer cod to 4 plates. Pour butter over cod. Top with garlic slices and salsa.
