Ingredients

• 7 1/2 ounces black forbidden rice
• 1 1/3 cups water
• - pinch of salt
• 4 large tilapia fillets (if vegetarian, firm tofu)
• - pam oil spray for grill grates
• ASIAN SPICY DRESSING
• 1/4 cup soy sauce
• 1/4 cup fish sauce (if vegetarian, omit)
• 1 tablespoon sesame oil
• 1 large lime juice & zest
• 1-2 tablespoon sriracha hot sauce
• 1/4 cup water
• 2-3 tablespoons splenda
• VEGGIES AND FRUIT FOR RICE SALAD
• 1 large mango, chopped
• 1/2 medium orange bell pepper, chopped
• 3 medium green onions, chopped
• 1 large tomato, deseeded & chopped
• 1 tablespoon cilantro, chopped
• 1 tablespoon fresh mint, chopped
• 2 large garlic cloves, chopped
• 1/2 small habanero pepper, fresh, chopped (optional)
• 1/4 cup cashews, roughly chopped
• - black sesame seeds to garnish
