fish taco's

This is for the Sammie Challenge using FISH and CUCUMBERS. Two ways to make this: HEALTHIER VERSION: baked fish fillets and raw cucumber sticks. TASTIER VERSION: breaded, fried fish, and fried cucumbers. Either way makes a delicious, refreshing meal.

Ingredients

  • LYNN'S TARTER SAUCE
  • 1 cup light miracle whip
  • 1 tablespoon plus 1 tsp. of ketsup
  • 2 tablespoons sweet pickle relish
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon black pepper
  • FISH TACO'S
  • 8-16 - fish fillets, depending on size
  • 8 - flour tortillas
  • 2 - cucmbers, cut into sticks
  • 2-4 tablespoons flour
  • - chopped lettuce

How To Make fish taco's

  • Step 1
    Use your favorite fried fish recipe, or buy frozen battered fish and cook per package directions.
  • Step 2
    Cut cucumber in half across.
  • Step 3
    Use a mandolin and cut into "stick".
  • Step 4
    Toss sticks with a little flour to absorb the moisture. Deep fry for a couple of minutes. Remove to bakers rack and salt and pepper.
  • Step 5
    Mix 1 c. of miracle whip with 1 tablespoon each of ketchup and sweet relish and 1/2 tsp. of lemon juice.
  • Step 6
    Shred or chop lettuce, set aside. Use a griddle or in a skillet sprayed with non stick spray oil. Heat till real hot (400°). Place tortilla on one side, heat till browned, fold in half with browned side inside, heat each half side of tortilla till browned.
  • Step 7
    Place lettuce, fish and cucumber stings in flour tortilla. Drizzle with tarter sauce and lemon juice.
