It looks fancy, but is very easy to make. I usually serve w/ rice pilaf.

Ingredients
- 6 tablespoons butter
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped onion
- 1/2 cup shredded carrot
- 1/2 teaspoon garlic powder
- 1/2 teaspoon each salt & pepper
- 1/2 cup bread crumbs, i used italian-style, but you can used plain
- 6 slices bacon, cooked and crumbled
- 4 - catfish fillets
- 2 tablespoons butter, melted
- - a sprinkling of parika for garnish
How To Make fancy stuffed catfish

Step 1Heat oven to 350. Lightly spray a 9" x 13" baking pan w/ cooking spray. In lg skillet, over medium heat, melt 6 tbsp butter. Add celery, onion, garlic powder, carrot,, salt and pepper.

Step 2Saute 5 mins. Remove pan from heat. Stir in bread crumbs and bacon crumbles. Evenly spoon mix down the middle of each fillet.

Step 3Roll up jelly-roll style. Place seam-side down in pan. Brush w/ melted butter. Sprinkle w/ paprika.. Bake 30 mins, or until fish flakes easily.
