A slow-cooked, delicious shrimp dish. I usually serve it over orzo pasta. The simmered tomatoes and feta cheese give the shrimp depth in taste.

Ingredients
- 1/4 cup extra virgin olive oil
- 1 - 28 oz can crushed tomatoes
- 1/2 cup dry white wine or chicken broth
- 1/2 teaspoon dried oregano
- 1 pinch salt
- 1 pinch crushed red pepper
- 1-1/2 pound medium shrimp, peeled, deveined
- 1 cup low-fat feta cheese, crumbled
- 2 tablespoons freeze-dried chopped parsley
- 1/2 cup sliced onion, thinly sliced

Step 1In lg skillet, heat oil over medium heat. Add onion, cook until tender. Place onions in a 4-quart slow-cooker.

Step 2Stir in tomatoes, wine, or broth, oregano, salt and crushed red pepper. Cover, cook on high for 2 hrs. Stir shrimp into sauce.

Step 3Sprinkle shrimp w/ feta cheese. Cover, cook on high 10 mins or until shrimp are opaque. Sprinkle w/ parsley.
