Easy shrimp w/ simmered tomatoes and feta

Ingredients

1/4 cextra virgin olive oil

128 oz can crushed tomatoes
-
1/2 cdry white wine or chicken broth
-
1/2 tspdried oregano
-
1 pinchsalt
-
1 pinchcrushed red pepper
-
1-1/2 lbmedium shrimp, peeled, deveined
-
1 clow-fat feta cheese, crumbled
-
2 Tbspfreeze-dried chopped parsley
-
1/2 csliced onion, thinly sliced
How to Make Easy shrimp w/ simmered tomatoes and feta
- In lg skillet, heat oil over medium heat. Add onion, cook until tender. Place onions in a 4-quart slow-cooker.
- Stir in tomatoes, wine, or broth, oregano, salt and crushed red pepper. Cover, cook on high for 2 hrs. Stir shrimp into sauce.
- Sprinkle shrimp w/ feta cheese. Cover, cook on high 10 mins or until shrimp are opaque. Sprinkle w/ parsley.
