A slow-cooked, delicious shrimp dish. I usually serve it over orzo pasta. The simmered tomatoes and feta cheese give the shrimp depth in taste.

    extra virgin olive oil
  • 1
    28 oz can crushed tomatoes
  • 1/2 c
    dry white wine or chicken broth
  • 1/2 tsp
    dried oregano
  • 1 pinch
  • 1 pinch
    crushed red pepper
  • 1-1/2 lb
    medium shrimp, peeled, deveined
  • 1 c
    low-fat feta cheese, crumbled
  • 2 Tbsp
    freeze-dried chopped parsley
  • 1/2 c
    sliced onion, thinly sliced

How to Make Easy shrimp w/ simmered tomatoes and feta


  1. In lg skillet, heat oil over medium heat. Add onion, cook until tender. Place onions in a 4-quart slow-cooker.
  2. Stir in tomatoes, wine, or broth, oregano, salt and crushed red pepper. Cover, cook on high for 2 hrs. Stir shrimp into sauce.
  3. Sprinkle shrimp w/ feta cheese. Cover, cook on high 10 mins or until shrimp are opaque. Sprinkle w/ parsley.
