delicious st peter’s fish
I love St Peters fish but I am not a fan of tilapia. This recipe is great for fish filets( which I love) / whole fish on the bone

Ingredients
- 1 tablespoon rosemary
- 1 tablespoon basil
- 1 tablespoon tarragon
- 1 tablespoon parsley
- 1 clove garlic
- 2 tablespoons bread crums
- 1 egg
- all purpose flour
- 2 st peter’s fish-flounder, bass
- 10 tablespoons butter
- 2 tablespoons white wine
- 1 oil for frying
- 1 juice of fresh lemon
How To Make delicious st peter’s fish

Step 1Combine the herbs, garlic and ginger in a mortar, crush, then add all but 2 tablespoons of the breadcrumbs. Mix well and spread over the bottom of a large oval dish

Step 2Coat the fish fillets with the egg, coat with flour and fry in the oil. When the fillets are done, drain on absorbent paper.

Step 3Add herbs to the butter. Slowly add the wine and lemon juice. Blend vigorously together, until the mixture is well amlgamated.

Step 4Set the golden-brown fillets of fish on the serving dish, sprinkle with the remaining breadcrumbs

Step 5Serve still warm, with the piping hot sauce.
