salmon croquettes w/jalapeno mustard dill sauce
This was probably my dad's personal favorite. I remember him (not my mother) frying these often when I was growing up. When I first started cooking, I would call my dad and get step by step instructions on how to make these. This remains a favorite in our household. Over the years, I've made a few minor changes but still they are very much like my dads. This is a very tasty cost effient meal. Hope you enjoy as much as I do. my photo's

Ingredients
- 1 can pink salmon, drained
- - cooking oil, i used canola
- 1/2 - sleeve premium soda crackers, crushed fine
- 1 large egg
- 3 tablespoons green onions, snipped (if you prefer, you can add chopped onion)
- 1 tablespoon lemon juice
- 1 or 2 tablespoons milk
- - cayenne pepper, to taste
- - salt, optional (remember salt is on the crackers)
- JALAPENO MUSTARD DILL SAUCE
- 6 tablespoons mayonnaise
- 1 tablespoon jalapeno mustard (i used uncle gary's gourment jalapeno mustard)
- 1/4 to 1/2 teaspoon dill, dried
How To Make salmon croquettes w/jalapeno mustard dill sauce

Step 1Drain salmon and remove any dark skin and bones.

Step 2Pour enough oil in skillet to cover bottom of a frying pan. Heat oil over a medium heat while making patties.

Step 3Mix all ingredients together and form about 6 patties. NOTE: if too dry, add more milk and/or lemon juice. If to moist, add more crackers crumbs.

Step 4Fry over a medium heat a few minutes on each side to a golden brown.

Step 5JALAPENO MUSTARD DILL SAUCE: Whisk all ingredients together; serve over salmon croquettes.
