CRISPY OVEN-FRIED FISH
For years I haven't been able to serve fish to my family as my husband refused to eat it. I love good fish; and, I'm happy to say that it is a regular on my table once again.
1 lbskinless fish fillets ( should be 1/2"-3/4" thick)
1/3 call purpose flour
1/3 cfine dry bread crumbs
1/4 cgrated parmesan cheese
1/2 tspdried dill
1/8 tspblack pepper
2 Tbspbutter, melted
How to Make CRISPY OVEN-FRIED FISH
- Thaw fish if frozen. Rinse and pat fillets dry w/paper towels. Cut into 4 serving sized pieces. Measure thickness of fish.
- Place milk in shallow dish. Place flour in a second shallow dish. In a third shallow dish combine bread crumbs, cheese, dill, and pepper. Mix. To this, add the melted butter and stir till combined. Dip fish in the milk; coat with the flour. Dip again in the milk; then in the crumb mixture to coat all sides.
Place fish on a greased baking sheet. Bake, uncovered, in a 450 degree oven for 4-6 minutes per 1/2" thickness or until fish begings to flake when tested with a fork.
