My mom & dad really love this when they visit (especially when I substitute haddock; they say it's expensive and kinda hard to find where they live in FL).

Ingredients

  • 6 ounces cod fillets, boneless (or haddock)
  • 3/4 cup almonds, finely chopped (or any nut you like)
  • 1/3 cup dried cranberries, diced
  • 3 1/4 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped (or 2 teaspoons dried)
  • 1 tablespoon coleman's mustard (or dijon)
  • 1 1/4 teaspoons orange zest, grated
  • - salt and pepper

How To Make cranberry/ mustard crunchy cod fillets

  • Step 1
    Preheat oven to 375°F.
  • Step 2
    Lightly grease a baking sheet with butter. Season both sides of cod with salt and pepper. Arrange fillets evenly on baking sheet.
  • Step 3
    In a small bowl, combine remaining ingredients; mix well.
  • Step 4
    Rub mixture onto top and sides of fillets evenly.
  • Step 5
    Bake until topping is light golden and fish is flaky, about 20 minutes.
  • Step 6
    Serve with your favorite side and veggie (I like brown rice and asparagus).
