1melt 3 tbs butter in a large skillet and saute onion for 5 min over med heat,. remove from heat mix in crab meat,bread crumbs,parsley,cream,and cajon seasoning. season fish lightly with salt & pepper. Spread stuffing mixture over fillets and roll; secure with wooden bamboo skewer.
2line 12" dutch oven with quick-release foil. put fish in bottom of dutch oven
Combine wine,and melted butter . pour pver fish,. Bake over med heat for 30 min,or just unil fish turns opaque,basting with sauce.
