Ingredients
- 4 - grouper,snapper,or catfish fillets
- 1/2 cup green onions minced
- 3 tablespoons butter, cold
- 1/2 pound crabmeat, fresh
- 1/2 cup bread crumbs, seasoned
- 1/4 cup parsley,fresh,chopped
- 1/4 cup heavy cream
- 3/4 cup dry white wine
- 1/3 cup butter, melted
- 1 teaspoon cajun seasoning
- - salt & pepper
How To Make crab-stuffed fish fillets

Step 1melt 3 tbs butter in a large skillet and saute onion for 5 min over med heat,. remove from heat mix in crab meat,bread crumbs,parsley,cream,and cajon seasoning. season fish lightly with salt & pepper. Spread stuffing mixture over fillets and roll; secure with wooden bamboo skewer.

Step 2line 12" dutch oven with quick-release foil. put fish in bottom of dutch oven Combine wine,and melted butter . pour pver fish,. Bake over med heat for 30 min,or just unil fish turns opaque,basting with sauce.
