This is a delicious recipe and so good for you. I believe the original recipe came from a Taste of a Home magazine. The recipe has been tweaked for my family's taste. The pictures for this dish show two fillets instead of the four listed in the recipe since I was only cooking for two that night. It really is worth a try, it's so good. Enjoy!

    salmon fillets (6 oz.
  • 1/2 tsp
    salt (divided)
  • 1/2 c
    olive oil, extra virgin
  • 2 Tbsp
    balsamic vinegar
  • 2 Tbsp
  • 1 tsp
    dijon mustard
  • 1
    ugly tomato, medium size
  • 1/4 c
    scallion, chopped
  • 1/4 c
    small yellow & orange peppers (1 of weach)
  • 2 Tbsp
    green olives, chopped

How to Make Oh So Yummy Mediterranean Salmon-Connie's


  1. Gather ingredients.
  2. Place salmon in a greased baking dish.
  3. Sprinkle with a 1/4 teaspoon salt.
  4. Whisk olive oil, balsamic vinegar, honey, mustard, and remaining salt in a small bowl.
  5. Spoon 1 tablespoon whisked mixture over each salmon fillet.
  6. Chop tomatoes, scallions, peppers and olives.
  7. In a large bowl, combine tomatoes, scallions, peppers, olives and remaining oil mixture.
  8. Soon tomato mixture over salmon fillets.
  9. Bake at 425 degrees for 12-15 minutes or until salmon flakes easily with a fork.
  10. Enjoy!
