This is a delicious recipe and so good for you. I believe the original recipe came from a Taste of a Home magazine. The recipe has been tweaked for my family's taste. The pictures for this dish show two fillets instead of the four listed in the recipe since I was only cooking for two that night. It really is worth a try, it's so good. Enjoy!

Ingredients

  • 4 - salmon fillets (6 oz.
  • 1/2 teaspoon salt (divided)
  • 1/2 cup olive oil, extra virgin
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 1 - ugly tomato, medium size
  • 1/4 cup scallion, chopped
  • 1/4 cup small yellow & orange peppers (1 of weach)
  • 2 tablespoons green olives, chopped

How To Make oh so yummy mediterranean salmon-connie's

  • Step 1
    Gather ingredients.
  • Step 2
    Place salmon in a greased baking dish.
  • Step 3
    Sprinkle with a 1/4 teaspoon salt.
  • Step 4
    Whisk olive oil, balsamic vinegar, honey, mustard, and remaining salt in a small bowl.
  • Step 5
    Spoon 1 tablespoon whisked mixture over each salmon fillet.
  • Step 6
    Chop tomatoes, scallions, peppers and olives.
  • Step 7
    In a large bowl, combine tomatoes, scallions, peppers, olives and remaining oil mixture.
  • Step 8
    Soon tomato mixture over salmon fillets.
  • Step 9
    Bake at 425 degrees for 12-15 minutes or until salmon flakes easily with a fork.
