I live in N. Florida, near the ocean and have access to fresh shrimp right off of the boat. This dish is very simple and a favorite when having guests over for dinner. The only thing that I add is a large bowl of yellow rice the dish is served up in on a large platter and everyone serves themselves. I generally cook it on the grill but it could be cooked in the oven on broil just as easily,

Ingredients

  • 2 pounds large fresh (if available) shrimp, heads off and peeled
  • 2 large navel oranges sliced
  • 2 medium sweet onions sliced
  • 2 medium limes
  • 2 medium lemons
  • 1 1/2 tablespoons italian seasoninig
  • - cajun seasoning (to taste

How To Make citrus shrimp

  • Step 1
    Peel the shrimp, place shrimp in bowl, cover and set aside.
  • Step 2
    Slice up the Citrus fruit. I slice it fairly thin but not too thin.
  • Step 3
    Line a Grill basket with foil or you could use a disposable aluminum roasting pan. Fill with the shrimp and citrus, add the seasonings. Place the whole thing on the grill at a medium heat or in the oven on broil. I cannot tell you how long to cook this as you DO NOT want to overcook the shrimp..just until they are pink and cooked all the way trough. This generally only takes a few minutes and the best way to tell when they are done is using a taste test :)
  • Step 4
    Place everything on a large platter. It goes well with a cold white wine and I serve it with a large bowl of yellow rice as a side dish.

    I also serve this with a roll of paper towels on the table. The dish is very conducive to eating with your fingers
