Ingredients
- 1 clove garlic
- 1 - serrano chile pepper seeded and chopped finely
- 2 tablespoons olive oil divided
- 2 tablespoons water
- 2 tablespoons orange juice concentrate
- 2 large navel oranges peeled, pitted and segmented
- 1 cup cilantro, fresh
- 1/2 cup red onion sliced thin
- - salt and pepper
- 1 large salmon filet cut into serving sections (about 8 per filet)
- 8 medium corn or flour tortillas
How To Make chili citrus salmon tacos

Step 1place chopped garlic and Serrano in 1 tbs olive oil and sauté over medium heat until soft. DO NOT BURN! remove and save in small dish. This will be the sauce/dressing to spoon over salmon as you build your taco. when cooled add oj concentrate and water. mix well.

Step 2Cook salmon sections in 1 TBS evoo 3 to 4 minutes on each side. S and P to taste. Cook fish until golden brown and opaque inside. when fish is almost done you can remove from heat and cover pan.

Step 3while fish is cooking chop cilantro, slice red onion, peel and prep red onion. I put all these ingredients in small serving dishes. Prepare tortillas however you like.

Step 4To build taco place fish in tortilla, ( break up with fork ) drizzle with dressing, add orange segments, cilantro and red onion. Wah Lah!
