Ingredients

  • 2 - salmon, skinless fillet
  • 2 tablespoons Cajun seasoning
  • 2 teaspoons dry thyme
  • 2 teaspoons coarse salt
  • 1 teaspoon black pepper
  • VEGETABLES
  • 2 cups rainbow carrots
  • 2 cups red potatoes, small
  • 2 tablespoons olive oil
  • 2 teaspoons salt and pepper
  • 2 teaspoons dry sweet basil
  • DIILL SAUCE
  • 1/3 cup sour cream
  • 2 teaspoons lemon juice
  • 2 sprigs dill
  • 1 tablespoon olive oil

How To Make cajun sauteed salmon with rainbow carrots and potato

  • Seasoning salmon fillets.
    Step 1
    Season salmon fillets with Cajun seasoning, salt, and pepper. Sprinkle dry thyme.
  • Sauteeing the salmon.
    Step 2
    Spray a saute pan with non-stick spray. Saute salmon in a pan skin side down first for 5-7 mins. Then flip and saute for another 5-7 mins.
  • Baking the salmon in the oven.
    Step 3
    Place in a 400'F oven for 10 mins.
  • Rainbow carrots in a saucepan.
    Step 4
    In two separate saucepans, place chopped carrots in one with a bit of water.
  • Potatoes in a saucepan.
    Step 5
    Place potatoes in the other. Boil both for 8 mins.
  • Carrots and potatoes strained and seasoned.
    Step 6
    Strain and add seasonings, basil, salt, pepper, and olive oil.
  • Carrots and potatoes roasting in the oven.
    Step 7
    Add carrots and potatoes to a baking sheet. Roast in 400'F oven for 15 mins.
  • Prepared dill sauce in a bowl.
    Step 8
    Dill Sauce: In a bowl, combine sour cream, dill, lemon juice, and olive oil. Mix well. Add to salmon when finished.
