1Season salmon filets with cajun seasoning, salt, and pepper. Sprinkle dry thyme. Saute in a pan skin side down first for 5-7 mins. Then flip and saute for another 5-7 mins. Place in a 400'F Oven for 10 mins.
2In two separate sauce pans, place chopped carrots in one with a bit of water, and place potatoes in the other. Boil for 8 mins. Strain and add seasonings, salt, pepper, and olive oil. Toss together and add to baking sheet. Roast in 400'F oven for 15 mins.
3Dill Sauce: In a bowl, combine sour cream, dill, lemon juice, and olive oil. Mix well. Add to salmon when finished.
