  • 2 Tbsp
    cajun seasoning
  • 2 tsp
    dry thyme
  • 2 tsp
    course salt
  • 1 tsp
  • 2 c
    rainbow carrots
  • 2 Tbsp
    olive oil
  • 2 tsp
    salt and pepper
  • 2 c
    red potatoes, small
  • 2 tsp
    dry sweet basil
  • 1/3 c
    sour cream
  • 2 tsp
    lemon juice
  • 2 sprig(s)
  • 1 Tbsp
    olive oil

How to Make Cajun Sauteed Salmon w/ Rainbow Carrots and Potato


  1. Season salmon filets with cajun seasoning, salt, and pepper. Sprinkle dry thyme. Saute in a pan skin side down first for 5-7 mins. Then flip and saute for another 5-7 mins. Place in a 400'F Oven for 10 mins.
  2. In two separate sauce pans, place chopped carrots in one with a bit of water, and place potatoes in the other. Boil for 8 mins. Strain and add seasonings, salt, pepper, and olive oil. Toss together and add to baking sheet. Roast in 400'F oven for 15 mins.
  3. Dill Sauce: In a bowl, combine sour cream, dill, lemon juice, and olive oil. Mix well. Add to salmon when finished.
