Ingredients

  • 1 lb
    salmon, fresh
  • 1 Tbsp
    rosemary citrus seasoning (or lemon pepper)
  • 4 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    butter, unsalted
  • 1 tsp
    course black pepper
  • ·
    kosher salt to taste
  • 2 large
    roma tomatoes, sliced
  • COLESLAW

  • 5 oz
    cabbage, shredded
  • 1/4 c
    bell peppers sliced (red, yellow& orange)
  • 3 medium
    green onion, stalks (sliced)
  • 1 Tbsp
    italian parsley, chopped
  • 1 Tbsp
    mint, chopped
  • 1 Tbsp
    all purpose greek seasoning
  • 1/4 c
    olive oil, extra virgin
  • 3 oz
    feta cheese, crumbles
  • 2 Tbsp
    white wine vinegar
  • 1
    juice of lemon
  • 1 Tbsp
    course black pepper

How to Make Broiled Salmon with Mediterranean Coleslaw

Step-by-Step

  1. in a large mixing bowl combine all the coleslaw ingredients, mix well
  2. chill in fridge while preparing salmon
  3. prep and clean salmon
  4. carefully remove skin from salmon
  5. preheat oven to broil. cut salmon into (4) 4 oz portions. in a small mixing bowl, combine rosemary citrus seasoning, olive oil, pepper and salt. brush both sides of salmon fillets and top with butter pieces. broil for 10-12 minutes. do not over cook
  6. plate coleslaw and top with salmon fillets. drizzle the olive oil and butter on top of salmon. dress plate with tomato slices and sprinkle with salt and pepper
