- 2 pounds fish fillets
- 2 teaspoons brown sugar
- 1 1/2 teaspoons salt
- 3/4 teaspoon dry mustard
- 1/2 teaspoon white pepper
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon granulated onion
- - a few dashes of hot sauce
- 4 - egges
- 1/4 cup butter milk
- 1 cup bread crumbs, seasoned
- 2/3 cup coconut, unsweetened
- 3/4 -1 cup cup coconut oil
- 3/4 cup flour
How To Make bob's coconut fish.

Step 1I used a 10 inch cast iron skillet to fry the fish. You will need 3 shallow dishes for the breading mix. In one dish place suger, salt, seasoning, and flour. In the next dish add eggs, hot sauce, and butter milk. Mix well. In the last dish mix bread crumbs and coconut together..

Step 2Add 1/4 inch of coconut oil to skillet and heat oil to med-high heat. Dip fish fillets one at a time into flour mix, then into egg mix, and then into breading mix. Press fish into breading mix on both sides.

Step 3Fry fish a few at a time for about 3 minutes per side. Or until golden brown. Add more oil as needed. You may also bake the fish in the oven set at 400 for 12-15 minutes.. Serve with a lemon slice and your favorite dipping sauce.
