blondie's tuna salad

This salad can be served as an appetizer or an entree. It is a favorite with my family and friends.

Ingredients

  • 1 large or 2 small cans of light chunk tuna or albacore, drained well
  • 1/2 cup celery, sliced very thin
  • 1 - firm green apple of choice (granny smith, etc)
  • 1/2 - to 2/3 cups mayo, hellman's
  • 1/2 teaspoon sugar, splenda, or truvia
  • 1 teaspoon apple cider vinegar or seasoned rice vinegar
  • - salt and pepper to taste~optional

How To Make blondie's tuna salad

  • Step 1
    In a medium bowl place fish, celery and apple. Set aside.
  • Step 2
    In another bowl combine mayo, sugar (sweetener), s&p. Stir well.
  • Step 3
    Pour over fish mixture, folding gently to coat well.
  • Step 4
    Serve on a whole lettuce leaf, or a bed of mixed lettuce. This is also yummy as a sandwich on a nice grainy bread~toasted or not.
