I couldn't wait to get a bite of this salad. I love spicy blackened dishes and with the roasted oranges I new it would take on a whole new taste. It is a one of a kind creation and my very best salad I have made so far. I fixed my husband a blackened chicken salad and he loved it too. I would say if you are going to put the mango in try and use a fresh one. That's the only thing I would change.
I hope you enjoy my salad creation and find a new love for oranges once you try them roasted. Also, if you haven't tried blackened dishes I hope this entices you to do so.

Ingredients

·blackened seasoning

·mixed greens

·black olives

2 - 3 slicemango (preferably fresh)

·pineapple, tidbits or chunks

·sliced roasted oranges

·handful of cranberries

·pecans (honey or cinnamon roasted would be delish)

ROASTED ORANGES

2 - 3 mediumoranges
-
·cinnamon, ground
-
·honey
-
·pure vanilla extract
How to Make Blackened Shrimp Salad with Roasted Oranges
- Prepare your shrimp by cleaning and then sprinkling your blackened seasoning on them. I set mine over ice for about 10 minutes with the seasoning and then fried them in a pan with a little butter or you can use oil too.
I enjoy both these blackened seasonings; however, I like the Louisiana one best. Plus I really like making my own blackened seasoning too.
You can also grill your blackened shrimp or chicken. That is even better for you and would make this an extremely healthy meal.
