Ingredients For blackened grilled fish

  • 1/4 c
    butter, melted and divided
  • 1/2 Tbsp
    freshly squeezed lemon juice
  • 4 lg
    fish fillets, rinsed and patted dry
  • 4 Tbsp
    creole seasoning mix (about 1/2 tbsp. per side), or as needed
  • 1 1/2 Tbsp
    canola oil, or more as needed

How To Make blackened grilled fish

  • 1
    Preheat BBQ between 450ºF to 500ºF. Place a cast-iron griddle or skillet on the grill. Close the lid and heat for 10 to 15 minutes.

    In a small saucepan over medium-low heat, melt butter. Add lemon juice and stir well.

    Brush melted lemon-butter on each fillet and coat all with Creole seasoning mix. Flip the fillets and repeat the steps; reserve the remaining butter for later.

    Brush the griddle with canola oil and place the fillets. Grill for 2 to 3 minutes or until almost black.

    Flip and brush some of the reserved lemon-butter on the cooked side. Grill for another 2 to 3 minutes or until the internal temperature reaches 145ºF. Serve immediately.
