salmon patties (sallye)

This is a go-to recipe for when you are either (1) rushed for time, (2) not really wanting to cook, or (3) needing a recipe to please kids. It fits all these criteria; at least my kids and grandkids have loved them through the years.

Ingredients

  • 1 can salmon (14-16 oz size)
  • 1 large egg, slightly beaten
  • 2 cups corn meal
  • 2/3 cup all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • - sale & pepper to taste

How To Make salmon patties (sallye)

  • Step 1
    Turn can of salmon out into bowl, juice included. Pick out obvious bones (although if you leave them in it doesn't hurt) Break up into chunks Add salt, pepper and garlic powder
  • Step 2
    Add lightly beaten egg and mix well with salmon
  • Step 3
    Add meal, flour and baking powder Mix well until the result is a stiff dough-like batter (Add more meal if necessary)
  • Step 4
    In heavy skillet, pour enough cooking oil to cover the bottom of pan about 1/2" deep Heat oil on medium high heat until it begins to barely smoke
  • Step 5
    Hand form salmon mixture into 6 patties and place in hot oil Cook each side until brown and crispy (about 5-6 minutes per side)
  • Step 6
    Drain on paper towel and serve while still hot.
