This is a go-to recipe for when you are either (1) rushed for time, (2) not really wanting to cook, or (3) needing a recipe to please kids. It fits all these criteria; at least my kids and grandkids have loved them through the years.

-
Step 2Add lightly beaten egg and mix well with salmon
-
Step 3Add meal, flour and baking powder Mix well until the result is a stiff dough-like batter (Add more meal if necessary)
-
Step 4In heavy skillet, pour enough cooking oil to cover the bottom of pan about 1/2" deep Heat oil on medium high heat until it begins to barely smoke
-
Step 5Hand form salmon mixture into 6 patties and place in hot oil Cook each side until brown and crispy (about 5-6 minutes per side)
-
Step 6Drain on paper towel and serve while still hot.
