A delicious way to bake tilapia -- a meal in itself with the rice, tomatoes, and black beans. The addition of the orange gives the dish a nice citrus note.

Ingredients

  • 3 tablespoons fresh lime juice
  • 3 tablespoons vegetable oil, divided
  • 4 tablespoons fresh cilantro, chopped
  • 4 teaspoons fresh garlic, minced
  • 1 1/2 teaspoons Kosher salt
  • 1/4 teaspoon sugar
  • 6 tilapia fillets
  • 3/4 cup long grain rice
  • 1 cup onions, chopped
  • 2 navel oranges, peeled, and coarsely chopped
  • 1 can 28-oz. can diced tomatoes, undrained
  • 1 can 14.5 oz. can black beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper

How To Make baked tilapia - costa rican-style

  • Step 1
    To make the marinade, combine lime juice, 1 tbsp. oil, 2 tbsp. cilantro, 1 tsp. garlic,1/2 tsp. salt and the sugar in a shallow dish. Add the tilapia and marinate 15 minutes, turning once.
  • Step 2
    Cook rice according to pkg. directions and keep the rice warm while the fish is marinating.
  • Step 3
    Preheat the oven to 400 degrees F. In a large,deep skillet , heat 2 tbsp. oil on medium heat. Saute the remaining garlic and add the onions. Cook until onions are soft about 5 minutes. Add 2 tbsp. cilantro, the oranges, diced tomatoes, black beans, oregano and the remaining salt, black pepper and the cayenne. Cook, uncovered until hot; stirring occasionally.
  • Step 4
    Place the hot rice in a 9 x 13 baking dish. Spoon the tomato/bean mixture on top of the rice and blend gently. Overlap the tilapia fillets on top and even marinade over filets.
  • Step 5
    Bake about 15-20 minutes or until fish begins to flake when test with a fork.
