Ingredients

3 Tbsp
olive oil, extra virgin
1 large
lemon, juiced
1/4 c
minced onion
2 tsp
minced garlic
2 - 3
roma tomatoes, seeded and diced
1/4 c
chopped ripe olives
2 tsp
oregano
1/2 c
chopped fresh parsley, divided
1/2 tsp
salt
1/2 tsp
black pepper
5 oz
crumbled feta cheese

How to Make Baked Talapia

Step-by-Step

  • 1Preheat oven to 400 degrees. Spray a 13-inch by 9-inch baking dish with nonstick
    cooking spray.
  • 2In a small bowl, combine olive oil, lemon juice, onion, garlic, tomatoes, olives, oregano,
    half the parsley, salt and black pepper. Mix well.
  • 3Lay Tilapia fillets in a single layer in the baking dish. Spoon oil and tomato mixture over
    the fish.
  • 4Cover with foil and bake for 15 - 18 minutes.
  • 5Remove from oven and garnish with remaining parsley and crumbled feta cheese.
  • 6Perfect served with steamed vegetables.
