Ingredients
- 3 tablespoons olive oil, extra virgin
- 1 large lemon, juiced
- 1/4 cup minced onion
- 2 teaspoons minced garlic
- 2 - 3 - roma tomatoes, seeded and diced
- 1/4 cup chopped ripe olives
- 2 teaspoons oregano
- 1/2 cup chopped fresh parsley, divided
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 5 ounces crumbled feta cheese
- 6 - talapia filets
How To Make baked talapia

Step 1Preheat oven to 400 degrees. Spray a 13-inch by 9-inch baking dish with nonstick cooking spray.

Step 2In a small bowl, combine olive oil, lemon juice, onion, garlic, tomatoes, olives, oregano, half the parsley, salt and black pepper. Mix well.

Step 3Lay Tilapia fillets in a single layer in the baking dish. Spoon oil and tomato mixture over the fish.

Step 4Cover with foil and bake for 15 - 18 minutes.

Step 5Remove from oven and garnish with remaining parsley and crumbled feta cheese.

Step 6Perfect served with steamed vegetables.
