1I find my fish fillets are more flavorful if I marinate them overnight.
This is the marinade that I make:
2Sprinkle the fillets with the garlic powder, chopped onions and cajun seasonings.
Pour the Italian dressing and wine over the fillets.
3Mix the spinach and mushrooms in a bowl and season them lightly with seasonings of your choice.
When ready to cook place the fillets ( which have been removed from the marinade) in a 13x9 baking dish that has been sprayed lightly with cooking oil spray.
4Cover the salmon with the spinach mixture.
Bake in a preheated oven at 400' for 45 minutes or until salmon flakes easily when tested with a fork.
