baked salmon with spinach and mushrooms

My family likes baked salmon and I wanted to vary my basic recipe. This is the one I came up with and they all enjoyed it.

Ingredients

  • 2--8 ounces salmon fillets (or 4--4 ounce fillets )
  • 3 cups fresh spinach, chopped
  • 2 cups fresh mushrooms, sliced
  • 1/4 cup italian dressing
  • 1/4 cup white wine
  • 1/4 cup chopped dry onions
  • dash garlic powder
  • dash cajun seasoning
  • - cooking oil spray

How To Make baked salmon with spinach and mushrooms

  • Step 1
    I find my fish fillets are more flavorful if I marinate them overnight. This is the marinade that I make:
  • Step 2
    Sprinkle the fillets with the garlic powder, chopped onions and cajun seasonings. Pour the Italian dressing and wine over the fillets. Refrigerate overnight.
  • Step 3
    Mix the spinach and mushrooms in a bowl and season them lightly with seasonings of your choice. When ready to cook place the fillets ( which have been removed from the marinade) in a 13x9 baking dish that has been sprayed lightly with cooking oil spray.
  • Step 4
    Cover the salmon with the spinach mixture. Bake in a preheated oven at 400' for 45 minutes or until salmon flakes easily when tested with a fork. Enjoy !!
