Baked Salmon with Spinach and Mushrooms

My family likes baked salmon and I wanted to vary my basic recipe. This is the one I came up with and they all enjoyed it.

2--8 oz
salmon fillets (or 4--4 ounce fillets )
3 c
fresh spinach, chopped
2 c
fresh mushrooms, sliced
1/4 c
italian dressing
1/4 c
white wine
1/4 c
chopped dry onions
garlic powder
cajun seasoning
cooking oil spray

How to Make Baked Salmon with Spinach and Mushrooms


  • 1I find my fish fillets are more flavorful if I marinate them overnight.
    This is the marinade that I make:
  • 2Sprinkle the fillets with the garlic powder, chopped onions and cajun seasonings.
    Pour the Italian dressing and wine over the fillets.
    Refrigerate overnight.
  • 3Mix the spinach and mushrooms in a bowl and season them lightly with seasonings of your choice.
    When ready to cook place the fillets ( which have been removed from the marinade) in a 13x9 baking dish that has been sprayed lightly with cooking oil spray.
  • 4Cover the salmon with the spinach mixture.

    Bake in a preheated oven at 400' for 45 minutes or until salmon flakes easily when tested with a fork.
