Ingredients
- 2 pounds salmon, skinless filet
- 1 large zuchinni, sliced
- 1 large squash, sliced
- 1 medium shallot, sliced
- 1 tablespoon olive oil
- 1 tablespoon oregano, dried
- - salt/pepper to taste
How To Make baked salmon in foil w/veggies

Step 1cut 4 pieces of foil... slice the zuchinni, squash & shallot into 1/4 inch slices.

Step 2cut salmon into 4 pieces & salt & pepper, on each piece of foil, place the sliced veggies equally divided, place a salmon piece on each. sprinkle with oregano and olive oil.

Step 3tightly fold each packet, bake at 350 for 30 mins. serve with a side of yellow rice ( or your favorite)
