Ingredients

  • 2 pounds salmon, skinless filet
  • 1 large zuchinni, sliced
  • 1 large squash, sliced
  • 1 medium shallot, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon oregano, dried
  • - salt/pepper to taste

How To Make baked salmon in foil w/veggies

  • Step 1
    cut 4 pieces of foil... slice the zuchinni, squash & shallot into 1/4 inch slices.
  • Step 2
    cut salmon into 4 pieces & salt & pepper, on each piece of foil, place the sliced veggies equally divided, place a salmon piece on each. sprinkle with oregano and olive oil.
  • Step 3
    tightly fold each packet, bake at 350 for 30 mins. serve with a side of yellow rice ( or your favorite)
