Ingredients

  • 1 1/2 pounds mahi mahi filets
  • 1 - each of red,yellow, green peppers, sliced
  • 2 - shallots, sliced
  • 2 - lemons
  • 1/4 cup butter, melted
  • - salt/pepper to taste
  • 1/4 cup parsley , chopped
  • 1/4 cup cilantro,chopped

How To Make baked mahi-mahi w/ tri-colored peppers

  • Step 1
    cut mahi-mahi into about 6 pieces, salt and pepper each side.
  • Step 2
    slice the peppers and shallots,place on the bottom of a oil sprayed baking dish.
  • Step 3
    place the mahi-mahi pieces on top and squeeze the juice of 1 lemon and drizzle with butter, top with sliced lemon and sprinkle with the parsley and cilantro, cover and bake at 350 about 30 mins or slightly firm to touch.
