Ingredients
- 1 1/2 pounds mahi mahi filets
- 1 - each of red,yellow, green peppers, sliced
- 2 - shallots, sliced
- 2 - lemons
- 1/4 cup butter, melted
- - salt/pepper to taste
- 1/4 cup parsley , chopped
- 1/4 cup cilantro,chopped
How To Make baked mahi-mahi w/ tri-colored peppers

Step 1cut mahi-mahi into about 6 pieces, salt and pepper each side.

Step 2slice the peppers and shallots,place on the bottom of a oil sprayed baking dish.

Step 3place the mahi-mahi pieces on top and squeeze the juice of 1 lemon and drizzle with butter, top with sliced lemon and sprinkle with the parsley and cilantro, cover and bake at 350 about 30 mins or slightly firm to touch.
