baked fish with basil and sun-dried tomatoes

I love fish and this recipe is a favorite of ours. I use flounder or cod. But you can really use any white fish of your choice. I wasn't always a fish lover, but my granmother made me eat this or else I was not allowed to have any of her Anise cookies. Well, I couldn't stop eating eat and asked for it as much as I could. Thanks grandma!!!

Ingredients
- 1 1/2 pounds fish fillets cut into 4-8 pieces
- 3 medium potatoes thinly sliced and blanched
- 6 tablespoons olive oil
- 1 medium onion diced
- 1/2 pound sun-dried tomatoes chopped
- 1/4 cup water
- bunch basil-chopped
- pinch hot red pepper flakes--optional
- - salt and pepper to taste
- 1/4 cup white wine
How To Make baked fish with basil and sun-dried tomatoes

Step 1in medium saucepan add 3 Tbsp olive oil and saute onions until golden

Step 2add sun-dried tomatoes and cook stirring and adding the water a little at a time

Step 3when water has evaporated add the wine and cook about 4-5 minutes, remove from heat

Step 4In a baking pan spread the potatoes and top with remaing olive oil, salt and pepper to taste

Step 5place fish on top and sauce on top of that

Step 6bake 30 minutes in a 400 preheated oven
