zesty alfredo pasta heaven
This is the BEST semi-homemade sauce I've ever made!! It has so much flavor and blends together so nicely! This could easily be made into a wonderful vegetarian pasta dish by omitting chicken and adding more veggies of your choice. This cheesy but light dish will quickly become your favorite too!

Ingredients
- 15 ounces jar alfredo sauce
- 1 cup chipotle gouda (boar's head cheese) shredded
- 1/2 cup parmesan cheese,shredded
- 14 1/2 ounces canned diced tomatoes with sweet onions (hunt's brand)
- 3/4 cup plain nonfat yogurt
- 1/2 cup skim milk
- 1/2 cup water
- 2 tablespoons dried parsley flakes
- 2-3 cups diced chicken, cooked
- 8 ounces fresh mushrooms
- 1 pound ziti rigati pasta (or pasta of your choice)
- 1/2 cup whole wheat bread crumbs

Step 1Preheat oven to 350 degrees F. Lightly coat a 13x9 baking dish with nonstick spray.

Step 2Prepare pasta to al dente per package directions; drain. Meanwhile,in a skillet, brown chicken in a olive oil; dice and set aside.

Step 3In a skillet, saute mushrooms in olive oil.

Step 4In bowl, combine alfredo sauce, chipotle gouda, parmesan, canned tomatoes, yogurt, milk, water and dried parsley; blend well.

Step 5Combine all ingredients and pour into prepared dish. Sprinkle with bread crumbs. Bake in preheated oven for about 30 minutes until bubbly. Serve.
