In the summer time, we love our home grown garden veggies. One of my family favorites is made with yellow squash. This dish goes a long way. Make up 2 & freeze one for another meal!

Ingredients

  • 2 boxes stuffing mix, chicken
  • 1 - chop onion
  • 1 bunch celery stalk
  • 1 can cream chicken soup
  • 2 cans chicken broth
  • 6 dashes sage, dried seasoning
  • 2 dashes poultry seasoning
  • 3 lg. cans chicken breast
  • - salt & pepper to taste.
  • 5-6 - yellow croked neck squash
  • 2-3 - fresh eggs, raw

How To Make yummy squash casserole

  • Step 1
    Cut squash into bite size pieces Boil till tender in sauce pan.Drain when tender. Set aside.
  • Step 2
    In a small sauce pan, melt butter then add celery & onion. Boil till tender.
  • Step 3
    In a 13 x 9 baking dish or cake pan, spray with non-stick spray.
  • Step 4
    Dump stuffing in pan, add eggs, 1/2 chopped onion,sage & poultry seasoning.Blend together with hands.
  • Step 5
    Add celery with onion, squash, and chicken. Last, add diluted soup with milk.
  • Step 6
    Mix altogether by hand, add salt & pepper, pop into the oven set at 350 for 35 minutes, or until done.
