Ashton love going to the garden... this is what he found this day.... a big eggplant... "Look Grandma! It's as big as my head!" There are so many ways to use eggplant.... so chop some up and freeze it for this winter!!

How To Make wild thang... ashton with a big eggplant

Step 1

Chop up eggplant (one or more).

Step 2

Place pieces on baking sheet. Put in freezer. When frozen solid, remove from freezer, loosen from pan by gently tapping pan on edge of counter.
Step 3

Pour frozen pieces of eggplant into zipper bags. Place them in the freezer until ready to use!
Step 4

Add some of the eggplant pieces to: Pasta Sauces, Chili, Soups, Stews, make Dips, .... it is even great in egg dishes!
