Wild Thang... Ashton with a big eggplant
There are so many ways to use eggplant.... so chop some up and freeze it for this winter!!
How to Make Wild Thang... Ashton with a big eggplant
- 1Chop up eggplant (one or more).
- 2Place pieces on baking sheet. Put in freezer. When frozen solid, remove from freezer, loosen from pan by gently tapping pan on edge of counter.
- 3Pour frozen pieces of eggplant into zipper bags. Place them in the freezer until ready to use!
- 4Add some of the eggplant pieces to: Pasta Sauces, Chili, Soups, Stews, make Dips, .... it is even great in egg dishes!
