Wild Rice, Mushroom & Chicken Soup
fresh mushrooms, sliced
cloves garlic, finely chopped
1Cook wild rice and 2 2/3 cups chicken broth until soft, according to directions on wild rice package.
2Meanwhile, melt butter in saute pan, over medium heat saute mushrooms, celery, onion, and garlic. Finally, add chicken and wine. Simmer until onions are translucent and chicken is cooked through.
3In a heavy bottomed stock pot combine cooked rice, chicken/mushroom mixture, and add 7 cups chicken broth, cream, and salt & pepper to taste. Simmer on low until heated through, stirring often.
