Ingredients
- 1 cup fresh mushrooms, sliced
- 4 - chicken breasts, diced
- 1 cup celery, chopped
- 1 cup onion, diced
- 3/4 cup dry white wine
- 1/4 cup butter
- 2 - cloves garlic, finely chopped
- 1 1/3 cups wild rice
- 2 2/3 cups chicken broth
- 7 cups chicken broth
- 2 cups heavy cream
- - salt & pepper, to taste
How To Make wild rice, mushroom & chicken soup

Step 1Cook wild rice and 2 2/3 cups chicken broth until soft, according to directions on wild rice package.

Step 2Meanwhile, melt butter in saute pan, over medium heat saute mushrooms, celery, onion, and garlic. Finally, add chicken and wine. Simmer until onions are translucent and chicken is cooked through.

Step 3In a heavy bottomed stock pot combine cooked rice, chicken/mushroom mixture, and add 7 cups chicken broth, cream, and salt & pepper to taste. Simmer on low until heated through, stirring often.
