A very rich and hearty soup for a cold day. Very flavorful and filling. I serve with slices of warm, freshly baked French bread.

Ingredients

  • 1 cup fresh mushrooms, sliced
  • 4 - chicken breasts, diced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 3/4 cup dry white wine
  • 1/4 cup butter
  • 2 - cloves garlic, finely chopped
  • 1 1/3 cups wild rice
  • 2 2/3 cups chicken broth
  • 7 cups chicken broth
  • 2 cups heavy cream
  • - salt & pepper, to taste

How To Make wild rice, mushroom & chicken soup

  • Step 1
    Cook wild rice and 2 2/3 cups chicken broth until soft, according to directions on wild rice package.
  • Step 2
    Meanwhile, melt butter in saute pan, over medium heat saute mushrooms, celery, onion, and garlic. Finally, add chicken and wine. Simmer until onions are translucent and chicken is cooked through.
  • Step 3
    In a heavy bottomed stock pot combine cooked rice, chicken/mushroom mixture, and add 7 cups chicken broth, cream, and salt & pepper to taste. Simmer on low until heated through, stirring often.
