I can not begin to tell you how delicious this recipe is. I make this recipe and serve it many different ways. Get any day of the year, whether you had just come in from a cold winter day or sitting outside around the campfire on a warm summer night.

Ingredients

  • 3 large chicken breasts, boneless and skinless
  • 2 cups water
  • 1 small onion
  • 3 cloves garlic, chopped
  • 1 cup enchilada sauce
  • 1 can creamed corn
  • 1 package taco seasoning mix
  • 1/2 cup cilantro, fresh
  • 1 can white beans, with juice

How To Make white chicken corn chili

  • Step 1
    1. Saute chicken in large skillet, browning on both sides until cooked. Remove from pan, cube into chunks, cover.
  • Step 2
    2. Add onion and garlic, saute over medium heat.
  • Step 3
    3. To large pot, add water, enchilada sauce, corn, seasoning mix, cilantro and beans, stir and simmer on low.
  • Step 4
    4. Chop and shred chicken into small pieces and add to pan. Simmer until thick. Serve with chips and dollop of sour cream.
  • Step 5
    Garnish: Corn Chips, Mexican cheese blend, Jalapeno peppers and sour cream
