I acquired this recipe while working as a leader for Weight Watchers. I love anything "white", white chili, white lasagna etc; so I knew the first time I made it that it would be a favorite! Very quick and easy!

Ingredients

  • 48 ounces great northern beans
  • 2 cups chicken broth, non-fat
  • 4 cups diced, cooked chicken breast
  • 2 cups salsa
  • 1 cup mozzarella cheese, low-fat

How To Make weight watcher's white chicken chili

  • Step 1
    May use pre-cooked chicken or spend the time pre-cooking your own. Don't overcook or it will dry out as it continues to cook in the crock pot. Season chicken as you like.
  • Step 2
    Combine all the ingredients in crock pot on low for 4-6 hours.
  • Step 3
    May use mild, medium or hot salsa depending on your preference. I use medium and it's not too hot for most people. Serve with cornbread or tortilla chips.
