warm and comforting chicken noodle soup

This soup is so warm and comforting. I like to make it on cold days and whenever a beloved family member is feeling a bit under the weather, and bonus, its quick and easy to make!

Ingredients

  • 4 - medium, boneless, skinless chicken breasts
  • 9 cups water
  • 2 cups uncooked wide egg noodles
  • 1 cup carrots, peeled and sliced
  • 1/2 cup chopped onion
  • 1 cup chopped celery
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped, fresh parsley
  • 2 tablespoons chicken soup base or 5 chicken boullion cubes

How To Make warm and comforting chicken noodle soup

  • Step 1
    Boil chicken in 9 cups of water in large Dutch oven for 15 minutes, occasionally skimming foam from the top.
  • Step 2
    Remove chicken from pot, reserving broth. Cut chicken up into bite-sized pieces; set aside and keep warm.
  • Step 3
    add 2 Tbsp. chicken soup base, or 5 chicken boullion cubes to pot along with remaining ingredients, except for noodles. Bring just to a boil; reduce heat and simmer for 30 minutes.
  • Step 4
    Add egg noodles to broth and cook 15 minutes or until tender.
  • Step 5
    Add chicken to Dutch oven along with fresh chopped parsley. Stir to mix. Ladel hot soup into bowls and serve.
