This soup is so warm and comforting. I like to make it on cold days and whenever a beloved family member is feeling a bit under the weather, and bonus, its quick and easy to make!

Ingredients

  • 4
    medium, boneless, skinless chicken breasts
  • 9 c
    water
  • 2 c
    uncooked wide egg noodles
  • 1 c
    carrots, peeled and sliced
  • 1/2 c
    chopped onion
  • 1 c
    chopped celery
  • 1/4 tsp
    pepper
  • 2 Tbsp
    chopped, fresh parsley
  • 2 Tbsp
    chicken soup base or 5 chicken boullion cubes

How to Make Warm and Comforting Chicken Noodle Soup

Step-by-Step

  1. Boil chicken in 9 cups of water in large Dutch oven for 15 minutes, occasionally skimming foam from the top.
  2. Remove chicken from pot, reserving broth. Cut chicken up into bite-sized pieces; set aside and keep warm.
  3. add 2 Tbsp. chicken soup base, or 5 chicken boullion cubes to pot along with remaining ingredients, except for noodles. Bring just to a boil; reduce heat and simmer for 30 minutes.
  4. Add egg noodles to broth and cook 15 minutes or until tender.
  5. Add chicken to Dutch oven along with fresh chopped parsley. Stir to mix. Ladel hot soup into bowls and serve.
