veggie stuffed chicken breasts

Several years ago, I wanted to make some sort of stuffed chicken breast, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

Ingredients
- 6 large boneless, skinless chicken breasts, pounded to 1/4 inch thickness
- 1/2 - yellow onion, chopped
- 2 large celery stalks, chopped
- 4 ounces mushrooms, chopped
- 1/4 small package shredded carrots, chopped
- 1 cup broccoli, chopped
- 16 ounces package of frozen spinach, thawed, drained and squeezed dry
- 8 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 2 teaspoons dried oregano
- 1/2 cup parmesan cheese, grated or shredded
- 8 ounces feta cheese, crumbled
- 2 - pieces of bread, toasted and crumbled (or croutons, crushed)
How To Make veggie stuffed chicken breasts

Step 1Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.

Step 2Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
