veggie stuffed chicken breasts

Several years ago, I wanted to make some sort of stuffed chicken breast, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

Ingredients

  • 6 large boneless, skinless chicken breasts, pounded to 1/4 inch thickness
  • 1/2 - yellow onion, chopped
  • 2 large celery stalks, chopped
  • 4 ounces mushrooms, chopped
  • 1/4 small package shredded carrots, chopped
  • 1 cup broccoli, chopped
  • 16 ounces package of frozen spinach, thawed, drained and squeezed dry
  • 8 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 2 teaspoons dried oregano
  • 1/2 cup parmesan cheese, grated or shredded
  • 8 ounces feta cheese, crumbled
  • 2 - pieces of bread, toasted and crumbled (or croutons, crushed)

How To Make veggie stuffed chicken breasts

  • Step 1
    Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.
  • Step 2
    Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
