Veggie Stuffed Chicken

Several years ago, I wanted to make some sort of stuffed chicken, but didn't know what. I had a frig full of veggies, so this is what I ended up with. It was amazingly good. I took it to a family gathering and everyone raved about it. I hope you try it and enjoy it too!

6 large
boneless, skinless chicken breasts, pounded to 1/4 inch thickness
yellow onion, chopped
2 large
celery stalks, chopped
4 oz
mushrooms, chopped
1/4 small
package shredded carrots, chopped
1 c
broccoli, chopped
16 oz
package of frozen spinach, thawed, drained and squeezed dry
8 clove
garlic, minced
1 tsp
black pepper
1 tsp
1 Tbsp
dried basil
1 Tbsp
dried parsley
2 tsp
dried oregano
1/2 c
parmesan cheese, grated or shredded
8 oz
feta cheese, crumbled
pieces of bread, toasted and crumbled (or croutons, crushed)

How to Make Veggie Stuffed Chicken


  • 1Mix everything together. Spread veggie mixture down the center of each flattened chicken breast and roll up tightly. Secure with toothpicks as needed. Place in baking dish seam side down.
  • 2Bake at 350, covered with foil, until chicken is nearly done (about 30-45 min.), then remove foil and finish cooking (another 15 min.).
