Here's my recipe for Turkey Joes, my version of "Sloppy Joes" I make with leftover turkey. (can also use leftover chicken) Easy to make and friendly on the budget. Enjoy!

Ingredients
- 1 tablespoon plus one teaspoon vegetable oil
- 1 cup chopped onions
- 1 cup chopped red bell pepper
- 1 clove garlic, minced
- 1 pound cooked turkey (can also use cooked chicken)
- 1 teaspoon dried oregano
- - salt and pepper to taste
- 1 pound can diced tomatoes (reserve liquid)
- 4 ounces chopped mushrooms
- 1 tablespoon all purpose flour
How To Make turkey sloppy joes

Step 1Heat oil in a large skillet over medium heat. Add onions, red pepper and garlic. Cook until tender, about 10 minutes.

Step 210 minutes. Add turkey, oregano, salt and pepper. Cook, stirring, until cooked through and flavors have blended

Step 3Reduce heat to low. Add tomatoes and mushrooms.

Step 4Stir flour into reserved tomato liquid. Pour over turkey mixture. Simmer, covered, 20 minutes, stirring frequently.

Step 5NOTE: Can be served over rice, noodles or hamburger buns.
