this is a low fat, gluten free way to make a versatile, tender checken, with little or no oil dependeding on your taste.

this is great with pasta or couscous or quinoa warm, or salad cold. or used in pot pie.

Ingredients

4
boneless, skinless chicken breasts
non stick spray
2 Tbsp
lemon juice
1 clove
garlic
2 tsp
tarragon (optional)
3 Tbsp
honey (optional)

Step-By-Step

1take a large (12-14 in) skillet and spray the non stick spray on the pan. heat the pan with a medium/high heat.
2cut up all breasts of chicken into 1/2in cubes. set aside.

Dice garlic. Add garlic to pan.
Once browned add chicken.
When the chicken has been lightly browned on all sides, cover with water.
Add lemon juice (and tarragon, and honey if desired).
3keep on medium/highheat until all water is gone.

then serve.
