Lots of Vegetables and noodles! Hubby and I had 2nds. Yum!

Ingredients

  • 1 package taste of thai noodles 8.8oz
  • 1-2 medium zucchini- cubed
  • 1 medium red bell pepper- diced
  • 1 medium green bell pepper-diced
  • 1 medium onion-diced
  • 3 tablespoons olive oil
  • 1 pound chicken-cooked and shredded
  • 2 dashes garlic parsley salt
  • 2 tablespoons butter

How To Make thai style rice noodles with chicken and veggies

  • Step 1
    In a large bowl, soak noodles for 15 min. See package directions.
  • Step 2
    Meanwhile, Stir fry Veggies over medium/high heat, in Olive Oil and Butter in large skillet . Season liberally. Toss and coat.
  • Step 3
    After soaking 15 min, Drain and rinse and drain again. Add noodles back into skillet. Toss to coat. Add more Soy sauce if needed.
