My husband is a diabetic who doesn't like chicken. Finding ways to disguise the taste of chicken can be difficult. I think I found one in this recipe as it combines other tastes he likes.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 - medium onion, chopped
  • 1 - medium green sweet pepper, chopped
  • 1/2 cup frozen whole kernel corn
  • 2 cloves garlic, minced
  • 2 ounces jalapeño, chopped (optional). can use green chilies instead, 4 ounce can
  • 1 pound chicken or turkey, ground
  • 1 teaspoon chili powder
  • 1 teaspoon cumin, ground
  • 1 teaspoon oregano, dried
  • 3/4 cup ketchup
  • 4 teaspoons worcestershire sauce
  • 6 - whole grain sandwich rolls

How To Make tex-mex sloppy joes

  • Step 1
    In a large nonstick skillet, heat oil over medium heat.
  • Step 2
    Add onion, pepper, corn, garlic, jalapeño or chilies. Cook for 4-5 minutes until onion is tender, stirring occasionally.
  • Step 3
    Stir in chicken or turkey, chili powder, cumin, and oregano. Cook for 5-6 minutes more until chicken or turkey is no longer pink. Stir in ketchup and worchester sauce; heat through.
  • Step 4
    Divide mixture among rolls (1/2 cup filling). Calories 280 ea (w/roll)
