My husband is a diabetic who doesn't like chicken. Finding ways to disguise the taste of chicken can be difficult. I think I found one in this recipe as it combines other tastes he likes.

Ingredients
- 2 tablespoons vegetable oil
- 1 - medium onion, chopped
- 1 - medium green sweet pepper, chopped
- 1/2 cup frozen whole kernel corn
- 2 cloves garlic, minced
- 2 ounces jalapeño, chopped (optional). can use green chilies instead, 4 ounce can
- 1 pound chicken or turkey, ground
- 1 teaspoon chili powder
- 1 teaspoon cumin, ground
- 1 teaspoon oregano, dried
- 3/4 cup ketchup
- 4 teaspoons worcestershire sauce
- 6 - whole grain sandwich rolls

Step 1In a large nonstick skillet, heat oil over medium heat.

Step 2Add onion, pepper, corn, garlic, jalapeño or chilies. Cook for 4-5 minutes until onion is tender, stirring occasionally.

Step 3Stir in chicken or turkey, chili powder, cumin, and oregano. Cook for 5-6 minutes more until chicken or turkey is no longer pink. Stir in ketchup and worchester sauce; heat through.

Step 4Divide mixture among rolls (1/2 cup filling). Calories 280 ea (w/roll)
