My husband is a diabetic who doesn't like chicken. Finding ways to disguise the taste of chicken can be difficult. I think I found one in this recipe as it combines other tastes he likes.

vegetable oil
medium onion, chopped
medium green sweet pepper, chopped
1/2 c
frozen whole kernel corn
2 clove
garlic, minced
2 oz
jalapeño, chopped (optional). can use green chilies instead, 4 ounce can
1 lb
chicken or turkey, ground
1 tsp
chili powder
1 tsp
cumin, ground
1 tsp
oregano, dried
3/4 c
4 tsp
worcestershire sauce
whole grain sandwich rolls

How to Make Tex-Mex Sloppy Joes


  • 1In a large nonstick skillet, heat oil over medium heat.
  • 2Add onion, pepper, corn, garlic, jalapeño or chilies. Cook for 4-5 minutes until onion is tender, stirring occasionally.
  • 3Stir in chicken or turkey, chili powder, cumin, and oregano. Cook for 5-6 minutes more until chicken or turkey is no longer pink. Stir in ketchup and worchester sauce; heat through.
  • 4Divide mixture among rolls (1/2 cup filling). Calories 280 ea (w/roll)
