My daughter found this easy, delicious recipe in a magazine ages ago. The sauce alone is addictive, and can be increased proportionally to make even more, if you want.

Ingredients
- 4 - chicken parts (i like legs & thighs in this recipe)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1 teaspoon taragon
- - paprika
How To Make taragon chicken

Step 1Place chicken in any ungreased baking dish, and sprinkle with paprika. If you choose to add vegetables (e.g. sliced carrots, potatoes), cook them in a microwave for about 6 minutes before placing in baking dish with chicken.

Step 2In a small dish, mix olive oil, salt, lemon juice, and taragon. Mix together thoroughly, then drizzle over chicken.

Step 3Place in a 325 - 350 degree oven: ovens vary, as I discovered when I went from gas (350) to electric (325, if I wanted tender meat), and bake for about 40 minutes, or until meat thermometer registers the proper temperature for chicken.

Step 4This can be served over rice, or as it is with the added vegetables. Sometimes, I will add fresh, sliced mushrooms.
