How to Make Taragon Chicken
- 1Place chicken in any ungreased baking dish, and sprinkle with paprika. If you choose to add vegetables (e.g. sliced carrots, potatoes), cook them in a microwave for about 6 minutes before placing in baking dish with chicken.
- 2In a small dish, mix olive oil, salt, lemon juice, and taragon. Mix together thoroughly, then drizzle over chicken.
- 3Place in a 325 - 350 degree oven: ovens vary, as I discovered when I went from gas (350) to electric (325, if I wanted tender meat), and bake for about 40 minutes, or until meat thermometer registers the proper temperature for chicken.
- 4This can be served over rice, or as it is with the added vegetables. Sometimes, I will add fresh, sliced mushrooms.
