tandoori chicken (in a regular oven)

I love Indian flavors and one of my favorites is tandoori chicken. Sadly I don't have a tandoor or clay oven so I've had to make do with my regular oven. I've worked several recipes in an attempt to bring some delicious Indian flavors into my kitchen. Well, I think I've go a winner! My husband says this is his new favorite home cooked meal. I serve it with my cilantro mint chutney, roasted cauliflower, and plain jasmine rice. Give it a try and tell me what you think!

Ingredients

  • 2 - chicken legs, skin removed
  • 2 - chicken thighs, bone-in, skin removed
  • 2 - chicken breast, bone-in, cut into 2-3 pieces, skin removed
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 2 tablespoons ginger, grated
  • 1 tablespoon garam masala
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 cup non-fat greek yogurt
  • 4 tablespoons lime juice
  • 2 teaspoons salt
  • - nonstick half sheet with rack, line with foil

How To Make tandoori chicken (in a regular oven)

  • Step 1
    Heat oil in small skillet over medium heat. When hot add garlic and ginger, cook 30 seconds stirring. Add garam masala, cumin, and chili powder, continue to stir and cook 30 more seconds. Remove from heat. Put half the mixture in a large bowl and mix with yogurt and 2 tablespoons of lime juice, set aside. In a medium bowl add the other half of the ginger mixture, 2 tablespoons of lime juice and salt.
  • Step 2
    Score each piece of chicken 2-3 times. Put the chicken in the large bowl with the ginger lime mixture, make sure the chicken pieces are covered with mixture. Sit at room temperature for 30 minutes.
  • Step 3
    Set oven to 325 degrees, with oven rack to upper middle position. Dip each chicken piece in the yogurt mixture and place on prepared pan with wire rack. Discard extra yogurt mixture, although there probably won't be much. Roast chicken for 25 minutes.
  • Step 4
    Remove chicken from oven and switch oven to broil on low. Turn chicken pieces over using tongs and place back in oven, 6 inches from the broiler. Broil for 10 minutes.
  • Step 5
    Remove chicken and switch broiler to high. Turn chicken pieces over (yes again), and back in over, 6 inches from broiler. Broil on high 5-10 minutes until the chicken is lightly charred in spots.
