Sweet & Sour Chicken Salad Sandwich

Jan W

This is my own creation, a can of white meat chicken seemed small & alone, so decided on sweet & sour...this is what I came up with today for lunch! It was quick, easy, and tasted great...husband ate it & said it was really good...
I used red leaf lettuce, but could use romaine or any other you like..
Please try this, it's just different enough to be good!

How to Make Sweet & Sour Chicken Salad Sandwich

  • 1Melt butter in nonstick skillet over medium heat. Add sugar, peppers, pineapple, onion and garlic. Sprinkle seasoning over and stir to combine. Let this mixture cook over medium¬high heat, stirring occasionally, until sauce starts to thicken and everything is tender.
  • 2Add chicken to skillet and stir well to combine, cook until completely heated through.
  • 3Put leaf lettuce on two slices of the bread, divide skillet mixture evenly between the two pieces of bread. Top with more lettuce and other two slices of bread.
  • 4Note: You can put mayonnaise or mustard on the bread but mixture is tasty without it and is very moist.
