sweet & sour chicken salad sandwich
This is my own creation, a can of white meat chicken seemed small & alone, so decided on sweet & sour...this is what I came up with today for lunch! It was quick, easy, and tasted great...husband ate it & said it was really good... I used red leaf lettuce, but could use romaine or any other you like.. Please try this, it's just different enough to be good!

Ingredients
- 1/2 stick butter or margarine
- 1/4 cup brown sugar
- 1/4 cup finely diced red pepper
- 1/4 cup finely diced yellow pepper
- 1 cup pineapple tidbits/crushed pineapple, drained
- 3 tablespoons finely diced onion
- 1/2 teaspoon minced garlic (i use from a jar)
- 1 teaspoon mrs. dash kitchen blend seasoning
- 1 can white meat chicken (10 0z.), drained & shredded
- - romaine or red leaf lettuce
- 4 slices 12-grain bread
How To Make sweet & sour chicken salad sandwich

Step 1Melt butter in nonstick skillet over medium heat. Add sugar, peppers, pineapple, onion and garlic. Sprinkle seasoning over and stir to combine. Let this mixture cook over medium¬high heat, stirring occasionally, until sauce starts to thicken and everything is tender.

Step 2Add chicken to skillet and stir well to combine, cook until completely heated through.

Step 3Put leaf lettuce on two slices of the bread, divide skillet mixture evenly between the two pieces of bread. Top with more lettuce and other two slices of bread.

Step 4Note: You can put mayonnaise or mustard on the bread but mixture is tasty without it and is very moist.
