sweet and sour chicken in rice

So easy and so good. I used more vegetables then called for and it was outstanding. You can mix and match vegetables and that makes it so colorful and delicious. This is a 20 minute recipe from start to finish.

Ingredients
- 1 tablespoon olive oil
- 1 pound boneless/skinless chicken breasts
- 16 ounces frozen stir fry vegetables
- 1 can pineapple chunks in juice, undrained
- 2 cups minute white rice, uncooked
- 1/2 cup sweet and sour sauce
- 1 can 10 1/2 oz. chicken broth
How To Make sweet and sour chicken in rice

Step 1Cut chicken in bite size pieces. Heat oil in large skillet on medium high heat. Add chicken, cook and stir 5 minutes or until cooked through

Step 2Add vegetables and pineapple with its juice: mix well. Stir in chicken broth. Bring to a boil

Step 3Stir in rice: cover. Remove from heat. Let stand 5 to 10 minutes or until almost all of the liquid is absorbed and rice is tender. Stir in sweet and sour sauce.
