Sweet and Sour Chicken in Rice

Ingredients

1 Tbspolive oil
-
1 lbboneless/skinless chicken breasts

16 ozfrozen stir fry vegetables

1 can(s)pineapple chunks in juice, undrained

2 cminute white rice, uncooked
-
1/2 csweet and sour sauce

1 can(s)10 1/2 oz. chicken broth
How to Make Sweet and Sour Chicken in Rice
- Cut chicken in bite size pieces. Heat oil in large skillet on medium high heat. Add chicken, cook and stir 5 minutes or until cooked through
- Add vegetables and pineapple with its juice: mix well. Stir in chicken broth. Bring to a boil
- Stir in rice: cover. Remove from heat. Let stand 5 to 10 minutes or until almost all of the liquid is absorbed and rice is tender. Stir in sweet and sour sauce.
