So easy and so good. I used more vegetables then called for and it was outstanding. You can mix and match vegetables and that makes it so colorful and delicious. This is a 20 minute recipe from start to finish.

Ingredients

  • 1 Tbsp
    olive oil
  • 1 lb
    boneless/skinless chicken breasts
  • 16 oz
    frozen stir fry vegetables
  • 1 can(s)
    pineapple chunks in juice, undrained
  • 2 c
    minute white rice, uncooked
  • 1/2 c
    sweet and sour sauce
  • 1 can(s)
    10 1/2 oz. chicken broth

How to Make Sweet and Sour Chicken in Rice

Step-by-Step

  1. Cut chicken in bite size pieces. Heat oil in large skillet on medium high heat. Add chicken, cook and stir 5 minutes or until cooked through
  2. Add vegetables and pineapple with its juice: mix well. Stir in chicken broth. Bring to a boil
  3. Stir in rice: cover. Remove from heat. Let stand 5 to 10 minutes or until almost all of the liquid is absorbed and rice is tender. Stir in sweet and sour sauce.
