A recipe that is worthy of serving to both family and friends. This flavorful chicken is moist and tender and the glaze is to die for. For your preserves, you may choose apricot, peach, plum or blackberry, they all work great in this dish. Our favorite is the apricot. Serve with fresh fruit for lunch or with a nice green salad and rice for dinner.

Ingredients For sweet and savory chicken envelopes

  • 1 lg
    portabello mushroom, cleaned and diced
  • 2 Tbsp
    butter
  • 2 lg
    shallots, thinly sliced
  • 2 clove
    garlic, finely minced
  • 1/4 tsp
    thyme, dried
  • 1/2 tsp
    fine sea salt
  • 1/4 tsp
    freshly ground black pepper
  • 2 tsp
    flour
  • 1/8 c
    dry white wine (good drinking wine)
  • 1/2 c
    Swiss cheese, thickly grated
  • 4
    boneless skinless chicken breasts, thinly flattened
  • 8 sheet
    phyllo dough
  • 1/2 c
    butter, melted
  • 1/2 c
    fruit preserves (apricot, peach or plum)
  • 2 lg
    lemons, juiced

How To Make sweet and savory chicken envelopes

    Saute the mushrooms in 2 tbsp of butter until golden brown. Set aside until needed. In the same pan, add shallots and garlic and saute gently a few minutes. Add the mushrooms back into the pan. Stir. Add the thyme, salt, pepper and flour, mix well. Add the white wine and cook until all the liquid has been absorbed. Taste and season with more salt and pepper if necessary. Allow to cool. Add grated cheese, mix and set aside until needed.

    Flatten your boneless, skinless, chicken breasts as thinly as possible, then set aside in fridge until needed.

    Preheat oven 350 degrees F. Brush first sheet of phyllo with melted butter. Place a second sheet of phyllo over the first and brush it with melted butter. Place the flattened chicken breast in the lower half of the phyllo sheet. Put 1/4 of the filling mixture over top of the flatten chicken. Fold the sides of the phyllo over the chicken like an envelope and place on a baking sheet seam side down and brush with melted butter. Do the same for the remaining chicken breasts. Bake for 35 minutes.

    Heat fruit preserves and lemon juice together until well mixed. Drizzle a small amount of glaze over the cooked chicken. Servd the rest on the side and your guests will thank you.
