This dish works well as a main dish, or side dish. I've taken it to pot lucks and had great reviews. Don't use meat and vegetarians love this dish. Vegans don't like the egg so you can make it with out it but the filling does come apart.

Ingredients

  • 1lb - ground meat of your choice
  • 1/4 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tablespoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 - egg
  • 1/4 cup uncooked brown rice
  • 1 quart tomato sauce
  • - parmesan cheese

How To Make summer squash

  • Step 1
    Preheat oven to 350.
  • Step 2
    Use whole Summer Squash cut the ends and scoop out the insides with a teaspoon (like you would a Pumpkin) leaving a hollow whole Squash ready to stuff.
  • Step 3
    Stuff the Squash with the meat mixture and place in a lightly greased baking dish. Pour Tomato sauce on top of the Squash.(I can my Tomatoes already pre seasoned so if you want to add spices to the sauce before pouring it on the Squash then do so)
  • Step 4
    Top it off with Grated Parmesan Cheese and bake at 350 for about 45 minutes. Test it with a fork for tenderness. When it is tender, it's done and it is delicious
