In the summer, I'm usually bust doing yard work, going to the beach, just having fun. So it's nice to have a meal that you can prepare and only use one pan!

Ingredients

  • 1 pound new potatoes
  • 3 1/2 pounds chicken pieces (cut up whole chicken)
  • 1/4 cup cup butter, melted plus
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 10 ounces package frozen english peas
  • 1/3 cup green onions, sliced
  • 1/4 cup fresh basil, chopped
  • 8 ounces carton sour cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How To Make summer chicken

  • Step 1
    Peel a 1/2 inch strip around the center of each potato. Brown the potatoes and chicken in butter in a large skillet over medium-high heat. Sprinkle with 1/2 teaspoon salt, 1/4 teaspoon pepper, and lemon juice. Cover, reduce heat, and simmer for 30 minutes.
  • Step 2
    Add the peas, green onions, and parsley; cover and simmer an additional 10 minutes or until the potatoes are tender and the chicken is done. Remove from the heat.
  • Step 3
    Remove the chicken and vegetables to a serving platter, reserving the drippings in the skillet; set aside and keep warm.
  • Step 4
    Add the sour cream, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the drippings; stir well. Allow to get warm but do not boil. Serve the chicken with the sauce.
