Ingredients For summer chicken

1 lbnew potatoes

3 1/2 lbchicken pieces (cut up whole chicken)

1/4 cup cbutter, melted plus

2 Tbspbutter, melted

1/2 tspsalt

1/4 tspblack pepper

2 Tbsplemon juice

10 ozpackage frozen english peas

1/3 cgreen onions, sliced

1/4 cfresh basil, chopped

8 ozcarton sour cream
-
1 tspdried thyme
-
1/2 tspsalt
-
1/4 tsppepper
How To Make summer chicken

1Peel a 1/2 inch strip around the center of each potato. Brown the potatoes and chicken in butter in a large skillet over medium-high heat. Sprinkle with 1/2 teaspoon salt, 1/4 teaspoon pepper, and lemon juice. Cover, reduce heat, and simmer for 30 minutes.

2Add the peas, green onions, and parsley; cover and simmer an additional 10 minutes or until the potatoes are tender and the chicken is done. Remove from the heat.

3Remove the chicken and vegetables to a serving platter, reserving the drippings in the skillet; set aside and keep warm.

4Add the sour cream, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the drippings; stir well. Allow to get warm but do not boil. Serve the chicken with the sauce.
